3/4 cup thinly sliced green pepper
3/4 cup thinly sliced red pepper
1 tsp olive oil
2 small yellow summer squash, thinly sliced
2 small zuchini, thinly sliced
1 tsp oregano
1/2 tsp salt
1/8 tsp pepper
1/2 cup shredded cheddar cheese
In microwave safe bowl, combine green and red peppers, drizzle with oil. Cover
and mocrowave on high for 2 - 3 1/2 minutes or until crisp tender. In a 1 1/2
quart baking dish coated with non-stick spray, layer half the squash, zuchini,
pepper mixture, oregano, salt andpepper, and cheese. Repeat layers. Cover and
bake at 375 for 20-25 minutes or until squash in crisp tender. Uncover; bake 10
It would be much more colorful to use different colored peppers.
